Joshua Blake, OpenKinect Community Founder has come up with his own version of windows 7 multitouch using Depth-Camera on Kinect for hand tracking. The proof of concept video shows Bing Maps being controlled using Kinect. This will work on any multitouch application already written to be used on a touchscreen.The code that enables this is part of internal InfoStrat MotionFx project which Joshua Blake works on and he says they will eventually be open sourced, but needs a bit more work to be practical..
